  • 20 oz fresh udon noodles (or 8 oz dried udon)
  • 4 cloves garlic
  • 1.5 tbsp neutral-flavored oil
  • 2 tbsp Chinese light soy sauce
  • 1 generous tbsp rice vinegar
  • 2 tsp organic brown sugar
  • 1/4 tsp ground white pepper
  • 1/3 cup creamy peanut butter
  • 3 tbsp to 1/3 cup hot water
  • 1/2 cup roasted peanuts, roughly chopped
  • 1 red bell pepper thinly sliced, or 8 oz Persian cucumber julienned
