  1. Flax egg

    Use this much

    2 tbsp ground flaxseed + 6 tbsp water. Whisk and rest 5 min until gel-like.

    Adds nutty flavour. Best in rustic / wholemeal bakes.

  2. Chia egg

    Use this much

    2 tbsp ground chia seeds + 6 tbsp water. Whisk and rest 5 min.

    More neutral flavour than flax. Same texture role.

    Use this much

    6 tbsp aquafaba (chickpea-can liquid). For meringue/whip: whisk 5-8 min with cream of tartar until stiff peaks.

    1/2 cup mashed ripe banana (~120 g).

    Use this much

    1/2 cup unsweetened apple sauce.

    Adds moisture and slight sweetness. Reduce other sweetener slightly.

    1/2 cup silken tofu, blended smooth.

    Adds protein, no flavour, dense moist crumb. Great in cheesecake bases.

    Use this much

    2 tsp baking soda + 2 tbsp white or apple cider vinegar. Stir into batter last.

    Only replaces the leavening role of egg, not the binding. Use in fluffy cakes that also have flour structure.
