Ingredients
- Dough:
- 200 g flour
- 100 g cold vegan butter (or coconut oil)
- Β½ tsp salt
- 4β6 tbsp cold water
- π A classic galette dough β simple and crispy.
- π₯ Filling (base):
- Β½ zucchini
- 1 carrot
- 1 onion
- Green beans
- Spinach
- Lemon zest and a little lemon juice
- 1β2 garlic cloves
- Olive oil
- Salt & pepper
- Herbs (thyme / oregano / basil)
- π Galettes are very flexible β you can use almost any vegetables you like.

1. Dough
Mix the flour and salt.
Add the cold vegan butter and rub it into the flour until crumbly.
Gradually add the cold water.
Form the dough into a ball, wrap it, and refrigerate for 20β30 minutes.
2. Filling
Chop the vegetables.
SautΓ© or roast them for 10β15 minutes.
If using spinach, simmer it for about 5 minutes with some vegan cream and 1 tablespoon of lemon juice.
π Important: itβs best to pre-cook the vegetables slightly so they wonβt stay raw inside the galette.
3. Assembly
Roll the dough out into a circle.
Place the filling in the center, leaving about 4β5 cm around the edges.
Fold the edges inward in a rustic style.
π A galette is a free-form pie β it doesnβt need to look perfect.
4. Baking
Bake at 180Β°C (356Β°F) for 30β40 minutes, until golden brown.
